Lemon Crumb Muffins || Recipe

There is nothing better than a muffin on a Saturday morning! Here at Garlands of Grace headquarters we are enjoying a batch of supremely moist Lemon Crumb Muffins fresh from the oven. The sweet smell of cistrusy-sweetness fills the air as the cool Spring morning goes by! It’s the making of a pretty spectacular day if you ask me. Today I want to share our own personal family recipe with you and hope you enjoy them as much as we do!! Lemon Crumb Muffins! This recipe is so easy and delicious that you will find yourself making them more often than just Saturday mornings. Enjoy!

Yeilds: 12 muffins

Muffin Batter:

  • 1/2 cup Butter (softened)
  • 1/2 cup White Sugar
  • 1 Egg
  • 1 1/2 tsp Vanilla Extract
  • 2 TBS Lemon Zest(about 2 lemons worth)
  • 4 TBS Lemon Juice
  • 4 TBS Milk
  • 1/2 cup Sour Cream
  • 2 cups Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt

Struesel/crumb Topping:

  • 1/2 cup Flour
  • 1/3 cup Quick Oats
  • 1/2 cup White Sugar
  • 1/8 tsp Salt
  • 6 TBS Butter (chilled)

Lemon Glaze:

  • 2 cups Powder Sugar
  • 1/4 cup Lemon Juice

Directions:

  1. Preheat oven to 400(f) and line muffin tin with liners or grease and flour!
  2. Prepare Streusel topping: combine 1/2 cup Flour, Quick Oats, 1/2 cup White Sugar, and 1/8 tsp Salt. Cut in chilled butter and set aside!Prepare Batter: Beat 1/2 c softented Butter and 1/2 cup White Sugar until fluffy. Add egg, vanilla, lemon juice, milk, and lemon zest mix well. Slowly incorporate flour, baking powder, baking soda, and salt. Add sour cream and mix well! Scrap sides of bowl and give a final mix.
  3. Scoop 1/4 cup matter into each muffin cup! Evenly sprinkle with Streusel topping and bake for 13-15 minutes or until toothpick inserted comes out clean!
  4. Glaze: Meanwhile, whisk powder sugar with enough lemon juice to make a glaze. Once the muffins have finished baking and cooled, drizzle with glaze!
  5. Sit back, relax, and Enjoy!!
