Liberty of London headwraps in Bright Pink, Cotton Blossom, & Strawberries and Cream! ♥

 There is no better way to spend a Saturday afternoon than baking with sisters and no more delightful treat to make than cupcakes! That’s what my sisters and I did today. I ♥ Cupcakes!! :) Add sprinkles to the mix and you have the perfectly perky dessert. :)  The base is a delicious Cream Cheese pound cake and the icing a sweet  cream cheese buttercream frosting. Supremely delicious! We’re wearing our Liberty of London Cecily headcoverings(for the girls too here ♥) today! :)

Yields: 2 dozen cupcakes

  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 bar (8 ounces) cream cheese, room temperature
  • 3 cups sugar
  • 6 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons salt
  1. Directions Preheat oven to 350 degrees. With an electric mixer, beat butter and cream cheese until smooth. Add sugar; beat until light and fluffy, about 5 minutes.
  2. Add eggs, one at a time, beating well after each addition. Mix in vanilla. With mixer on low, add flour and salt in two additions, beating until just combined.
  3. Line 2 dozen muffin cups with papers and immediately pour in batter (usually 1 1/4 ice-cream scoopers full). Bake until golden and a toothpick inserted in the centers comes out almost clean, approximately 15 minutes. Cool completely. Pipe on icing(recipe bellow) and top immediately with sprinkles!
  4. Brew a rather large pot of coffee, sit down with a few of your favorite people, and enjoy!! (:

Cream Cheese Buttercream frosting:

  • 1 cup butter softened
  • 4 oz softened cream cheese
  • 1TBS vanilla
  • 1/2tsp almond extract
  • 6 cups powder sugar

Cream together butter, cream cheese, vanilla, and almond extract. Add powder sugar 1 cup at a time until icing reaches the right consistency. Pipe onto cooled cupcakes and enjoy!

Pumpkin Spice Coffee Creamer From Scratch! || Recipe

I know what your thinking, “Spring is just around the corner so why pumpkin?” Well, why not? :) If you like me,  then you will agree that pumpkin spice should never be out of season. ;) I love pumpkin spice lattes but I’m not a huge fan of the coffee syrups plus they can be quite expensive! So, an easy and fun way to make your own! The recipe originated from Deliciously Organic. I did add additional vanilla and cinnamon. If you prefer your coffee a little sweeter I recommend adding more maple syrup! :)

Ingredients:

  • 2 cups   half and half
  • 3 tbs  pumpkin puree
  • 2 tsp of pumpkin spice
  • 4 tbs Maple Syrup
  • 3 tsp of vanilla extract
  • 2 tsp of cinnamon
  • 1/4 tsp nutmeg
  1. Whisk the half and half, pumpkin, syrup, and pumpkin spice together over medium heat.
  2. When it gets steamy remove from heat and add in the vanilla. Pour into bowl, covering, and let set for 3-6 hours in fridge.
  3. Use a strainer to transfer the cream into a jar or pitcher… do not skip this step, trust me! This will make the creamer smoother. :)
  4. Enjoy!

Reese’s Cheesecake Brownies || Recipe

If you like peanut butter and chocolate you will LOVE these brownies! :) Micah made a pan for New Year’s and we all enjoyed them. Original recipe found on Recipe Critic with a few modifications made by Micah! :)

Serves: 16
Ingredients

Brownie layer:

  • ¾ cup butter
  • 6 oz unsweetened chocolate, chopped
  • 1½ cups sugar
  • ½ cup brown sugar, packed
  • 1½ tsp vanilla
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 (12 oz) bag mini reese’s peanut butter cups, divided and chopped into fourths
  • For the peanut butter cheesecake layer:
  • 8 oz block bream cheese, softened
  • ¼ cup butter, softened
  • 1 egg
  • ½ cup sugar
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 cup creamy peanut butter
  • For the chocolate layer on top:
  • 1 (12 oz) bag semi-sweet chocolate chips
Instructions
  1. Preheat your oven to 350 degrees. Line a 9×13 inch pan with aluminum foil for easy removal of the bars. Spray with cooking spray and set aside. Chop your reese’s peanut butter cups into fourths and divide them in half.
  2. In a microwave safe bowl or using a double broiler, melt the ¾ cup of butter and chopped dark chocolate. Stirring ever 30 seconds being careful not to let the chocolate burn.
  3. Whisk sugar and brown sugar to the melted chocolate mixture. Then add the vanilla and eggs until it it is fully incorporated. Stir the flour until incorporated. Fold in half of the chopped Reese’s Peanut butter cups. Pour this mixture into your prepared 9×13 inch pan.
  4. To make the cheesecake layer, in a stand mixer using the paddle attachment, cream together the cream cheese and softened butter about 2 minutes until fluffy. Mix in the egg, sugar, salt, and vanilla on high for another 2 minutes. Mix in the peanut butter for 2 minutes.
  5. Pour the cream cheese layer over the brownie layer and spread it out so that it is smooth on the top and completely covers the brownie layer. Bake for 35-40 minutes. The top and edges should be slightly golden and the center is set.
  6. Let the bars completely cool and refrigerate for at least an hour before the chocolate layer on top. To make the chocolate layer, in a microwave safe bowl, add the chocolate chips. Melt 30 seconds at a time until melted and smooth. Pour over the top of the peanut butter cheesecake layer and spread evenly. Sprinkle the rest of the chopped Reese’s Peanut Butter Cups on top. Pop in the fridge until the chocolate is set. Cut into squares and serve.
